Microwave Brownies in a Mug Are a Pregnant Woman's Best Friend

Microwave brownies in a mug are a thing, and a very good thing if you're pregnant and craving brownies at 9 pm

It was 9 pm and I needed cake or brownies.  I ate some dark chocolate to see if that would work, and it didn't.

The thought of making regular brownies crossed my mind, but I didn't want to wait that long and it was too late in the evening.  I googled fastest brownies recipe or something like that and found recipes for microwave brownies in a mug.

That was it!

I had seen recipes for brownies in mugs before, but it never sounded interesting to me.  When you're 25 weeks pregnant and you want some brownies NOW, the idea suddenly sounds enticing and miraculous.

Read on for the recipe I used and a delicious-sounding healthy version my cousin-in-law sent me.

 
Microwave Chocolate Mug Brownie
Adapted from Food.com (I changed the water to milk and reduced the sugar from 4T to 2T, as some of the reviews suggested)

2 tablespoons butter, melted
2 tablespoons milk
1/4 teaspoon vanilla extract
1 dash salt
2 tablespoons granulated sugar
2 tablespoons unsweetened cocoa powder
4 tablespoons all-purpose flour

Directions:

1 In a 12 oz coffee mug, add water, butter, vanilla and dash of salt. Whisk well.
2 Add cocoa powder, whisk well. Add sugar, whisk well. Add flour, whisk well.
3 Microwave for 60 to 90 seconds. Center should be slightly molten. Careful not to overcook.
4 Enjoy with a spoon. Careful brownie will be hot.

When my cousin-in-law saw that I had made the brownies in a mug, she said she makes a healthy version.  It sounds like it could be great, even though it's sugar free.

Sugar-Free, Flour-Free, Dairy Free Brownie in a Mug
3 tbsp almond meal
2 tbsp cocoa powder
1 egg
1 tsp cinnamon
1 tsp vanilla
Pinch of salt
1 1/2 tbsp honey
Peanut or almond butter optional
Add a little bit of almond milk to make it moist (optional)

Cook for 2 minutes in the microwave
